Easy, cheesy garlic bread starts with a simple baguette smeared with delicious herb compound butter and topped with melty cheese, making it the perfect side dish for any weeknight favorite.
1Bulb of Garlic (+/- 8 - peeled and finely minced)
⅓cupRicotta Cheese
½cupFresh Parsley (finely chopped)
2cupsShredded Mozzarella
1tspGarlic Powder
1tspSalt
½tspBlack Pepper
Instructions
Preheat the oven to 400°F. Cut the baguette (yeasted or sourdough) in half lengthwise.
In a medium-sized bowl, add the butter, finely minced garlic, ricotta, most of the parsley (reserve a bit for garnishing after baking), garlic powder, salt, and black pepper. Mix until smooth, and then spread a thick layer of the compound butter over each piece of the baguette.
Top the baguettes with the mozzarella cheese. Bake for 12 minutes, then broil on high for 2-3 minutes (until the cheese becomes golden brown).
Sprinkle with the remaining parsley, and serve warm. Enjoy!
