Chicken Alfredo Pasta Bake

One Pan, One Very Good Dinner

This is the kind of recipe that earns its place in a weeknight rotation immediately and stays there. Everything happens in a single cast iron skillet. The chicken gets golden and seasoned. The pasta cooks directly in chicken broth, absorbing all of that flavor as it softens. Cream, butter, and parmesan go in off the heat and turn the whole thing into a rich, cohesive sauce. Mozzarella goes on top and the whole pan goes into the oven until the cheese is bubbly and golden.

Dinner is on the table in under forty-five minutes. The cleanup is one pan.

Why the Pasta Cooks in Broth

Cooking the pasta directly in chicken broth rather than boiling it separately in salted water is the decision that makes this dish taste better than a standard pasta bake. As the pasta absorbs the broth, it takes the flavor of the broth with it, so the noodles themselves are seasoned all the way through rather than being a neutral vehicle for the sauce on top.

The starch the pasta releases into the broth as it cooks also thickens the liquid slightly, giving the sauce more body once the cream and parmesan go in. It is a built-in thickener that requires no roux and no extra steps, and it is the reason the finished sauce clings to every piece of pasta rather than pooling at the bottom of the pan.

Golden Chicken First, Everything After

Browning the chicken pieces before any liquid enters the skillet builds the flavor base the entire dish is built on. Seasoned with Italian seasoning, garlic powder, salt, and pepper and cooked until genuinely golden on the outside, the chicken develops a crust that contributes depth to the broth poured in afterward. The browned bits left in the pan from the chicken are lifted by the broth and dissolved into the cooking liquid, adding a savory undertone that makes the finished sauce taste more layered than a cream and parmesan sauce typically would.

The chicken also finishes cooking through during the pasta’s boiling time, which means nothing is undercooked and nothing is overcooked by the time the cream goes in.

The Cheese Goes In Twice

Adding parmesan and one cup of the mozzarella off the heat before the bake and then topping with the remaining mozzarella before the oven is the move that gives this dish two distinct cheese moments. The first addition melts completely into the sauce, enriching it and giving it a silky, cohesive texture. The second sits on the surface and bakes into a layer of golden, bubbly, slightly crisp mozzarella that makes the finished dish look and feel like something that required significantly more effort than it did.

Off the heat is the specification that matters for the first addition. A pan still on a burner is hot enough to break the sauce and cause the cheese to seize rather than melt smoothly. Remove the skillet from the heat completely before the cream, butter, and parmesan go in, and stir until everything is fully melted and combined before the mozzarella topping goes on.

Ten to Twelve Minutes in the Oven

The bake time is short because everything is already fully cooked before the pan goes in. The oven’s only job is to melt and brown the mozzarella on top, which it does quickly at 400°F. Ten minutes produces melted, bubbling cheese. Twelve minutes gives you the golden, slightly crisp spots on the surface that make a baked pasta worth the extra step.

Watch it during the last few minutes. Cast iron retains heat aggressively and continues cooking even after it comes out of the oven, so pulling it right at the twelve-minute mark rather than letting it sit in the oven produces a creamier, saucier pasta than one that went slightly too long.

Ingredients

  • 1 lb Chicken Breast (cut into bite sized pieces)
  • 16 oz Pasta (any shape)
  • 32 oz Chicken Broth
  • 1 cup Heavy Cream
  • 4 tbsp Butter
  • 1 cup Parmesan (grated)
  • 1 tbsp Italian Seasoning
  • 3 tsp Garlic Powder (divided)
  • Salt and Pepper to taste
  • 1½ cups Mozzarella (shredded)

Instructions

  1. Preheat the oven to 400°F. In a large, oiled cast iron skillet over medium heat, add the bite sized pieces of chicken. Season with the Italian seasoning, 2 tsp of garlic powder, salt, and pepper. Cook them until they golden brown.
  2. Once golden, add the chicken broth and pasta. Season with the remaining garlic powder and salt. Bring the broth to a boil and allow the noodles to cook until al dente, roughly 10 minutes (depending on your pasta shape).
  3. When the pasta is al dente, remove from the heat and add the cream, butter, parmesan, and 1 cup of mozzarella cheese. Stir until all of the cheese has melted and is fully combined into the pasta.
  4. Top the pasta with the remaining mozzarella cheese, and bake for 10-12 minutes, until the cheese is melted and golden brown.
  5. Enjoy!
