Pumpkin Muffins with Cream Cheese Filling

Fall Is Better With a Surprise Inside

Some mornings call for a muffin you can hold with both hands. This is that muffin.

It is big and soft and full of pumpkin and cinnamon. Then you bite in and find a ribbon of sweet cream cheese hiding in the middle. On top, a crunchy oat crumble adds a little texture to every bite.

The batter comes together in one bowl. There is no mixer and no fuss. You can go from cold kitchen to warm muffins in about thirty-five minutes.

Why Sour Cream and Oil Make These So Moist

Pumpkin muffins can turn dry or gummy. This recipe avoids both problems.

Avocado oil keeps the crumb soft for days. It has a mild flavor, so the pumpkin and spice stay in front. Sour cream adds a little tang and a tender texture. It also balances the sweetness from the two sugars.

Brown sugar does extra work here. It holds on to moisture, so the muffins stay fresh longer. Using it alongside white sugar gives you a deeper, warmer flavor than white sugar could on its own.

Building the Layers

Here is the fun part. Each muffin gets a scoop of batter first. Next comes a dollop of cream cheese filling, then another scoop of batter. A final dollop of filling goes on top.

This layering keeps the cream cheese from sinking to the bottom. It stays in the center, where it bakes into a soft, custard-like pocket. The egg in the filling helps it set, so it holds its shape when you cut a muffin in half.

Finish with the crumble. Scatter it around the edges of each muffin top. It bakes into golden, crunchy clusters that make the muffins look as good as they taste.

The Trick for Tall, Domed Tops

Want that bakery look? Two small steps make the difference.

First, fill only every other cup in your muffin pan. The empty spaces let heat move freely around each muffin. This helps the batter rise up instead of spreading out.

Second, use two temperatures. Bake at 400°F for five minutes, then lower the oven to 350°F without opening the door. The blast of early heat pushes the batter upward fast. The lower heat then finishes the center gently. This is the same method we use for the morning bun muffins on this blog.

Bake for another fifteen to twenty minutes. The muffins are done when the centers are fully set.

Keep Them, Share Them, Freeze Them

Store the muffins in an airtight container in the refrigerator because of the cream cheese filling. They keep well for up to four days. Warm one for about twenty seconds in the microwave and it tastes freshly baked.

They also freeze nicely. Wrap each muffin on its own, and thaw it overnight in the fridge.

If you love pumpkin season as much as we do, try these alongside the classic pumpkin bread or the pumpkin cinnamon rolls. Your kitchen will smell like autumn all week.

Ingredients

FOR THE MUFFINS

  • 250 g Flour
  • 1 can Pumpkin Puree
  • 10 g Vanilla
  • 2 Eggs (room temperature)
  • 150 g Sugar
  • 150 g Brown Sugar
  • 80 g Avocado Oil
  • 80 g Sour Cream (room temperature)
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 tbsp Cinnamon

FOR THE FILLING:

  • 1 brick Cream Cheese (softened)
  • 1 Egg
  • 80 g Sugar
  • 10 g Vanilla

FOR THE CRUMBLE

  • 1 stick Butter (softened)
  • 60 g Sugar
  • 100 g Flour
  • 80 g Oats
  • 2 tsp Cinnamon

Instructions

  1. Preheat the oven to 400°F. In a large bowl, whisk together the pumpkin, brown sugar, granulated sugar, eggs, vanilla, avocado oil, and sour cream until smooth.
  2. Add the flour, baking powder, baking soda, salt, and cinnamon. Gently fold the dry ingredients into the wet, just until the flour is absorbed. Set aside to prepare the filling and topping.
  3. For the filling, whisk the cream cheese, egg, sugar and vanilla until smooth. Set aside. For the crumble, add the butter, flour, oats, sugar, and cinnamon to a bowl. Fluff the mixture together with a fork to create a crumbly texture.
  4. In a lined muffin pan, add one scoop of the muffin batter. Then, add a dollop of the cream cheese, top it with another scoop of batter, and finally add one more dollop of cream cheese on top. Add the crumble around the edges of the muffin top. For extra muffin height, leave every other muffin space empty in the tray.
  5. Bake at 400°F for 5 minutes. Then, without opening the oven door, lower the heat to [350°F](x-apple-data-detectors://embedded-result/1500). Bake for an additional 15-20 minutes, until the muffins are full set in the center.
