Every home baker needs their go-to pie crust recipe. Whether you’re whipping up a chicken pot pie or on pumpkin pie duty for Thanksgiving, this easy pie crust recipe is one you’ll turn to time and time again. 

A few quick tips:

  1. Ice cold water and super cold butter are ESSENTIAL! This is what keeps the butter from fully incorporating into the dough. If the butter melts into the flour, you’ll be left with a tough crust. 
  2. Use good quality butter. Trust me, it makes a difference!
  3. Don’t skip the layering of the dough! Again, this is where you’ll be creating all of the delicious flakiness. 

Storing your pie crust

This pie crust requires at least 1 hour of chilling before it’s rolled out, but it can stay in the fridge for up to 3 days. It’s so easy to make ahead if needed!

Ingredients

  • 185 g Flour (1.5 cups)
  • 5 g Salt (1 tsp)
  • 12 g Sugar (1 tbsp)
  • 142 g Cold Butter (10 tbsp)
  • 80 g Ice Water (â…“ cup)

Instructions

  1. Cut your cold butter into small cubes, then let them chill in the freezer until you’re ready to add them to your dough. 
  2. Add the flour, salt, and sugar to a large bowl. Add your very cold butter and pinch the butter into the flour mixture. Add the ice cold water, and gently begin to incorporate the water into the flour. 
  3. Dump the dough onto a clean surface. Using a bench scraper, cut the butter into the flour until everything is well incorporated, but make sure the butter remains visible in the dough.
  4. Press the dough into a large rectangle. Cut it into for equal pieces, and stack them on top of one another. This creates the perfect flakiness! Press the four pieces down, then roll it out with a rolling pin on a floured surface. 
  5. Shape the dough into a thin circle, wrap it in plastic wrap, and refrigerate for at least 1 hour. 
  6. When it comes time to bake, follow your recipe’s instructions, but it is typically baked at 400°F.
