One-Pan Coconut Yellow Curry

This coconut yellow curry is creamy, comforting, and easy to make in one pan. Made with chicken, coconut milk, and warm spices, it’s the perfect weeknight curry served over rice.

Ingredients

  • 2 Large Chicken Breasts cut into bite sized pieces
  • 1 Yellow Onion
  • 1 Bell Pepper
  • 2 Minced Garlic Cloves
  • 4 oz Yellow Curry Paste
  • 1 Can Coconut Milk
  • 1 tbsp Curry Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt to taste
  • Olive Oil for the pan

Instructions

  1. Dice the onion and slice the bell pepper into thin strips. Over medium heat, sauté them in an olive oil coated pan. Stir regularly to avoid burning.
  2. Meanwhile, cut your chicken. In a small bowl, toss the chicken with the curry powder, garlic powder, onion powder, and salt until evenly coated.
  3. Once the onion and pepper are tender, add the chicken and minced garlic. Stir well to combine, and allow the chicken to cook for 5-7 minutes.
  4. Add your curry paste and coconut milk. Stir to combine and allow the mixture to come to a simmer.
  5. Cover the curry with a lid. Allow the curry to simmer for another 10 minutes over low heat.
  6. Serve over rice.
