Ingredients

FOR THE MEATBALLS:

  • 1 lb Ground Beef
  • 1 lb Ground Pork
  • ½ cup Italian Bread Crumbs
  • ½ cup Whole Milk
  • 2 Eggs
  • ¼ cup Chopped Parsely
  • 3 Cloves of Garlic (minced)
  • ½ cup Grated Parmesan
  • 2 tsp Oregano
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1 (16oz) Jar of Marinara Sauce

FOR THE BUTTER:

  • 2 Sticks of Butter (softened)
  • 1 Head of Garlic (roasted)
  • ¼ cup Parsley
  • 1 tsp Salt

Instructions

  1. Add all of your meatball ingredients to a large bowl. Mix everything together with your hands, just until everything is evenly distributed. Do not over-mix at this stage - it will result in a tough meatball! Roll the meatballs into your desired size.
  2. Heat a large oiled skillet over medium heat. Cook the meatballs until all sides are golden brown, then pour the marinara over top. Cover and allow the meatballs to simmer in the marinara until they are fully cooked through, roughly 10-15 minutes.
  3. Meanwhile, prepare the garlic butter. Add the butter, roasted garlic, parsley, and salt to a small bowl. Mix to combine.
  4. Once the meatballs are cooked through, assemble your sandwich. Cut your focaccia in half and spread the garlic butter on both sides. Add your marinara meatballs, and top with fresh mozzarella cheese. Before adding the top piece of bread, bottom of the sandwich on high for 2 minutes, until the cheese is bubbly and golden.
  5. Finish assembling your sandwich with the top piece of the bread, and enjoy!
