Homemade Steak Frites

  1. When choosing your steaks, it is best to get a very thick cut. This will result in the best, most even cook.
  2. Allow the steaks to sit at room temperature for 1 hour. This helps get a perfectly even cook on the steaks.
  3. Begin heating a large cast iron pan over medium/high heat. While the pan heats up, pat your steaks dry with a paper towel. This is essential is creating a crispy crust on the outside.
  4. Generously season each side of the steak with salt and pepper. Do not be shy with this step! You want the steak to be well coated on all sides.
  5. Once the cast iron has been preheating for at least 5 minutes, add cooking oil to the surface. Place the seasoned steaks onto the hot pan. Do not lift the steaks from the pan for 5 minutes - We want the steaks to sear properly to create that beautiful crust!
  6. Flip the steaks once the bottom has a dark, crispy crust. Allow the steak to cook on the opposite side, and also on the edges. Remove the steaks from the hot pan once the center thickest part of the steak reads 125°F. Again, this will be easiest to achieve with a thick steak. If the steak is too thin, it will heat too quickly without getting dark enough on the outside.
  7. Allow the steaks to rest to 5 minutes. Thinly slice and serve with fresh crispy fries and topped with chimichurri sauce.
