Add the warm milk, yeast, and brown sugar to a small bowl. Stir the ingredients together and let it rest for 5 minutes, until the surface becomes foamy.
Meanwhile, add the flour and salt to the bowl of a stand mixer with the dough hook attached. Add the milk mixture to the flour, along with the warm water. Mix on a low speed until the ingredients are well combined, around 5 minutes. Then, increase the speed to medium and add the softened butter. Allow the dough to mix until it becomes smooth and passes the windowpane test. This should take around 15 minutes.
Cover the dough and allow it to rise until it has doubled, around 1.5-2 hours.
Once the dough has risen, bring a large pot of water to a boil and preheat the oven to 400°F. Remove your dough from the bowl onto a floured surface. Cut the dough into 5 long strips, roll them into thin logs, and cut them into bite sized pieces.
When the water is boiling, add the baking soda to the water. In batches, place the pretzel bites into the boiling baking soda water. Be sure not to over crowd the pot. Allow the pieces to boil for 30-45 seconds, stirring a fews times to ensure all sides of the pretzel bites are boiled.
Using a slotted spoon, remove the boiled bites from the baking soda bath and place them on a parchment lined baking sheet. Brush each piece with egg wash.
Bake the pretzel bites for around 30 minutes, until they achieve a deep golden brown color.
While the pretzel bites bake, prepare the cream cheese dip. Add the softened cream cheese, maple syrup, and vanilla bean paste to a small bowl. Whisk until smooth and set aside.
After the pretzel bites are baked and while they are still warm, pour them into a large bowl. Drizzle the melted butter over them and toss to coat. Sprinkle the granulated sugar and cinnamon evenly over the buttery pretzels. Toss to coat them evenly in the cinnamon sugar.
Serve the warm pretzel bites with the cream cheese dip, and enjoy!
