Sourdough Discard Crackers
The Easiest Way to Turn Discard Into Something Addictive
If you keep a sourdough starter, you know how quickly discard can pile up. These sourdough discard crackers are one of the simplest, most satisfying ways to use it. With just a few pantry staples and your favorite seasonings, you can transform that extra starter into thin, crispy crackers that disappear almost as soon as they cool.
They are savory, crunchy, and endlessly customizable. The kind of snack you make once and immediately realize you will be making again.

Why This Recipe Works So Well
Sourdough discard already contains flour, water, and developed flavor. That means it is the perfect base for a quick cracker dough. When baked thinly, the natural tang intensifies slightly, creating depth without overpowering the seasoning.
Butter adds richness and helps the crackers crisp beautifully. Because the mixture is spread directly onto the baking sheet, there is no rolling or cutting required before baking. It is approachable, low effort, and ideal for busy weeks.
A Blank Canvas for Flavor
One of the best parts about sourdough discard crackers is how flexible they are. A simple mix of salt, pepper, and garlic powder creates a classic savory cracker. Italian seasoning adds warmth and herbaceous notes. You can experiment with everything from sesame seeds to rosemary, chili flakes, or even grated parmesan.
Each batch can feel a little different depending on what you sprinkle in. That makes this recipe practical and creative at the same time.
Perfect for Snacking and Entertaining
These crackers pair beautifully with cheese boards, dips, soups, and spreads. They hold their structure well, making them sturdy enough for hummus or soft cheeses. Crushed, they can even be used as a topping for salads or casseroles.
Because they store easily in an airtight container, they are also a smart make ahead snack. Homemade crackers feel thoughtful, but they take very little effort compared to most baked goods.
A Smart Way to Reduce Waste
Sourdough baking naturally creates discard, and finding consistent ways to use it keeps your routine sustainable. This recipe helps reduce waste while giving you something genuinely delicious in return.
Sourdough discard crackers are crisp, flavorful, and surprisingly simple. If you are looking for an easy sourdough discard recipe that delivers big results with minimal ingredients, this one belongs in your regular rotation.
