- 800 g Berries of Choice (fresh or frozen)
- Juice From One Lemon
- 80 g Sugar
- 1 tbsp Cornstarch
- 1 tsp Vanilla Extract
- 3 tbsp Softened Butter
COBBLER TOPPING
- 100 g Sourdough Starter (active or discard)
- 3 tbsp Melted Butter
- 70 g Heavy Cream
- 130 g Flour
- 50 g Brown Sugar
- 2 tsp Baking Powder
- 1/4 tsp Salt
Instructions
- Preheat your oven to 400°F.
- Add your berries of choice to a 10-12” cast iron skillet (or casserole dish). Add your lemon juice, cornstarch, sugar, and vanilla. Mix to coat the berries evenly.3. Dot the softened butter over the surface of the berry mixture.

- Cover your skillet with foil and bake for 20 minutes. Add 5-10 minutes at this step if you’re using frozen berries.
- While the berries bake, add your starter, melted butter, heavy cream, flour, brown sugar, baking powder, and salt to a bowl. Mix thoroughly to combine.
- After the berries have baked for 20 minutes, remove your skillet from the oven and top with the cobbler mixture by adding small pieces over the top of the berries.
- Bake uncovered for another 20-25 minutes, until the cobbler topping is golden brown.
- Allow the cobbler to cool for 15 minutes, and then serve warm with vanilla ice cream.
